RECIPE
Roast chicken with basil and lemon
(adapted from Nigel Slater’s Real Food)
4-6 free-range chicken pieces, bone in
3 T. olive oil
2 juicy cloves of garlic
1 whole lemon
20 basil leaves
1 cup of white wine
Season chick and place in roasting pan. Pour olive oil over chicken. Slide crushed garlic beneath skin. Squeeze lemon over chicken. Roast for 30 minutes at 400 degrees. Then add torn basil atop and cook for 10 more minutes.
Pour wine over chicken, then place pan over a hot pan and let wine bubble.
